a) Reception and separation of the must
Rosé wines are made using nearly identical production processes as those for whites. In the beginning, rosés also undergo crushing and pumping; the difference lies in the fact that only the mosto yema or first must is used. This flows through solid substances, and picks up some of the colouring agents from the grape skins as it flows, producing a must that appears lightly coloured.
