Another of the key names of the area is the Sanz family, headed by Segundo Sanz and his son Antonio Sanz, pioneer in introducing the sauvignon blanc and in making barrel-aged wines. Furthermore he was the first to make the original Castilian cava, Palacio de Bornos.
Both belong to the most classic group of wine-makers with a purist style among whose ranks also feature Ángel Rodríguez Vidal and Grupo Yllera. The second generation has brought a more innovative and modern style brilliantly represented by Dos Victorias, Belondrade, Víctor Rodríguez and Lurton.
Both have accepted new ways of wine-making such as the cold maceration process of the must including the skins with the aim of improving the extraction of the aromatic potential of the verdejo. Furthermore, with barrel-fermentation initiated by Antonio F. Sanz and Marqués de Riscal and perfected by Belondrade and Lurton, the verdejo has reached the pinnacle of expression and excellence.
