The first is the winery’s crown jewel. The lovingly selected grapes and the careful attention to each step of the winemaking process in the cellar are redoubled for this wine. “This is our most highly prized wine and where I have invested all my excitement. The patient wait from the moment the grapes enter the cellar up to when the wine is showcased on the market becomes a feature that is present in the wine itself. The complexity of its colour and bouquet prove that all our efforts were worthwhile,” explains its proud author.
In turn, ‘Finca Sobreño Crianza’ is Bodegas Sobreño’s calling card. “We wanted this wine to be our more marketable presentation. We strove for a wine that was excellent, but at attractive value,” clarifies Manuel Ruiz, only to expand on the point in adding, “the wine is proving that we got it right and now we must work to keep standards just as high and continue to meet our clients’ expectations”.
Finally, ‘Finca Sobreño Roble’ is the simplest of the three. “We are aware of the fact that many groups of people appreciate younger and more fruity wines. Wines that are sometimes easier to drink or can even be savoured on their own, without a meal. These were the people we had in mind when making our Roble, which is also turning out to be extremely satisfying in our day-to-day work,” admits Bodegas Sobreño’s Technical Director.
This is Manuel Ruiz Hernández, a wise, straightforward and humble man who is passionate and extremely knowledgeable on the Castilian terroir, particularly at DO Toro, where he is currently investing his best efforts.
