In just seven years, the Dos Victorias bodega has made a name for itself and sparked interest among the specialist press, even outside Spain, as proved by their recent nomination as Best Revelation Winery 2004 in Europe in the well-known German Newcomer des Jahres contest held by the Wein Gourmet magazine.
Small but good
Their philosophy has been to carefully produce just small amounts. Their yields are low (between 6,000 and 8,000 kg per hectare in Rueda and between 2,500 and 3,500 kg per hectare in Toro), and they are committed to traditional values and the typicity of their region.
The Verdejo grapes come from the 20-year-old Pariente family vineyards, which has poor, light-brown soils with some liminess on the highest ground. Production is by pneumatic pressing followed by maceration for 48 hours. Alcoholic fermentation takes place in controlled-temperature steel tanks then the wine is left on its lees for a further 20 days. After racking, it undergoes a cold treatment and filtration and is then bottled.
The Elías Mora wines come from vines with an average age of 20, most of them being grown in the traditional vase shape. Fermentation takes place in steel tanks at a temperature not exceeding 27ºC, and the process is completed with a few days of maceration with the grape skins, then ageing in the barrel.
